Eggs in Coconut Milk


Ingredients

  • 6 hard-boiled Al Jazira "Golden Eggs"
  • 1 clove Garlic, minced
  • 1 small Onion, sliced
  • 1 tablespoon Oil
  • 1/2 teaspoon Salt
  • Pepper to taste
  • 1 tablespoon Curry Powder
  • 1 cup Coconut Milk
  • 1 small Sweet Pepper

Method

  • Peel the hard-boiled eggs and cut into quarters.
  • Fry onion and garlic in oil until golden.
  • Add the curry powder, salt, and peppers.
  • Mix well and gradually add the coconut milk and then the chopped sweet peppers. Cook until it thickens. Remove from heat and add the cooked eggs.
